Snowmygosh!

Our girl was visiting for Christmas and the Minnesota landscape was nothing but brown – not a snowflake in sight.  We were pretty bummed that there would be no snow angels, no snowmen, and worst of all…no sledding!

The next day we were home making a batch of the most amazing Sea Salt Caramel Rice Krispie Bars (recipe below from our friend Krystal) and guess what happened?  The flakes started to fly!  Our girl threw on her coat, frantically looked for a scarf and mittens, and raced outside to enjoy a few glorious minutes in the snow.

It was a small miracle that totally and completely made our day!

It is amazing how being with children can remind you to really enjoy the small pleasures in life.  Hope you all had a wonderful Holiday season!  I am looking forward to a bright 2012!

Sea Salt Caramel Rice Krispie Treats
 
Ingredients
            Rice Krispie Treats
·       ½ cup butter
·       8 cups mini marshmallows
·       8 cups Rice Krispie cereal
            Caramel Filling and Topping
·       1 ½ (14 oz) package caramels, unwrapped
·       1 cup butter
·       1 (14 oz) can sweetened condensed milk
·       4 cups mini marshmallows
·       coarse sea salt
 
Instructions
Layer One:
Melt half the butter in a large pot over medium heat
When the butter is melted, stir in half the marshmallows, keep stirring until the marshmallows are melted – about 2 to 3 minutes
Stir in half the cereal and mix until cereal is coated.
Press the cereal mixture into a greased 9″ by 13″ baking pan.
 
Layer Two:
Melt the caramels, butter and milk in a small saucepan and bring to a boil.
Spread 2 cups of mini marshmallows over the first layer of cereal mixture.
Pour ¾ of the caramel mixture over marshmallows and cereal mixture.
Refrigerate 30 minutes, until set.

 
Layer Three:
Melt the remaining butter in a large pot over medium heat
When the butter is melted, stir in the remaining marshmallows, keep stirring until the marshmallows are melted – about 2 to 3 minutes
Stir in the remaining cereal and mix until cereal is coated.
Press on top of cooled caramel (layer two)
 
 Topping:
Drizzle the remaining ¼ caramel mixture over the top of the rice krispie treats, this can be done before or after cutting them into squares
Sprinkle a very little amount of sea salt on top of the caramel
